San Baylon, immersed in the Rome of the Trident, in the heart of Via di Ripetta; a refined, intimate and welcoming atmosphere. At the helm of the kitchen, Chef Marco Ciccotelli; in the visible pastry shop Chef Pâtissier Giuliano Marzullo, and in the San Baylon cocktail bar, the Bar Manager Desierè Verdecchia, all supported with utmost care by F&B manager Alessia Meli.

Also part of the family, thanks to their collaboration, are two excellent colleagues on the Food and Beverage scene in Rome. Giuseppe Solfrizzi, patron of Le Levain, has designed for San Baylon a dessert menu inspired by traditional Italian pastry. The Jerry Thomas Project has created an original signature cocktail menu for San Baylon, with exquisite attention to detail.
