San Baylon, immersed in the Rome of the Trident, in the heart of Via di Ripetta; a refined, intimate and welcoming atmosphere. Also part of the family, thanks to their collaboration, are two excellent colleagues on the Food and Beverage scene in Rome. Giuseppe Solfrizzi, patron of Le Levain, has designed for San Baylon a dessert menu inspired by traditional Italian pastry. The Jerry Thomas Project has created an original signature cocktail menu for San Baylon, with exquisite attention to detail.

The Ripetta Residence, a wonderful architectural complex set between Piazza del Popolo and Piazza di Spagna, was built in 1600 to house a convent. Over the centuries it expanded, thanks especially to the involvement of Pope Innocenzo XI, always maintaining its austere splendour. In 1672 it became the Conservatorio della Divina Provvidenza, a place of shelter for poor and orphaned girls, allowing them to escape their ill fate.
Today we unite the legacy of these spaces, helping to transform them into something new, without ever losing touch with history.
